Secretly Vegan Chocolate Chip Cookies

Ingredients

Into bowl no.1:

250g All Purpose Flour

1 tsp (4g) Baking Powder

3/4 tsp (4g) Baking Soda

1/2 tsp Kosher Salt

200g Dark Chocolate chips (or any chocolate chips you prefer)


Into bowl no.2:

100g Raw cane sugar

110g Dark brown sugar or Coconut palm sugar

115g Canola oil or any neutral oil

70g Water


Instructions

  1. In a medium bowl, mix together flour, baking powder, baking soda, salt, & chocolate chips.

  2. In a large bowl, add the sugars, canola oil, & water. Whisk until smooth & well combined for about 2 minutes.

  3. Add the flour chocolate chip mixture into the wet mixture, & then stir with a spatula until just combined & no more dry flour is visible. Do not overmix.

  4. Cover the bowl with plastic wrap or a lid and refrigerate the dough for at least 12 hours & up to 24 hours. Do not skip this step.

  5. Preheat the oven to 180C. Line two baking trays with parchment paper, Remove dough from the fridge & use an ice-cream scoop to portion dough into 2-inch round mounds. Sprinkle the balls of dough with flaky sea salt & bake for 13 mins. Let cool completely before eating.
